Most of what leaves the shop leaves in a box. Call ahead and the pie goes into the fire while you are on your way, so pickup timing stays honest instead of hopeful. Boxes are vented so the crust steams less on the ride, and sauce cups ride separate so the knots stay dry.
Delivery keeps to a tight ring around the shop, because a wood-fired pie has a short window before the box beats the crust. Outside that ring, carryout is the better call: say when you are leaving and the pie will come out of the fire as you pull in.
